  • ½ Cup Cacao Powder
  • 1 Tsp. Instant Coffee
  • ¼ Tsp. Ancho Chili Powder
  • ¼ Tsp. Salt
  • 1 Tbsp. Pure Vanilla Extract

 

Add the avocado, date paste, honey, and coconut milk into a food processor. Process the mixture until smooth. Add in cacao powder, coffee, chili powder, salt, and vanilla. Process until all are incorporated.

Transfer mixture to a bowl and beat with a hand mixer until fluffy. This should take about five minutes.

Refrigerate four to six hours before serving and enjoy!

Add a spoonful or two of coconut oil to a skillet on medium-high heat. Lay banana slices in the skillet when hot, cooking for a few minutes per side. Remove from heat.

Immediately after removing the skillet from the heat, add the honey mixed with a small amount of hot water over the bananas.

Let cool. Add cinnamon to taste and serve.

Almond Berry Skillet Cake

Fruit Filling

  • 3 Honeycrisp Apples
  • 1 Cup Blackberries
  • 1 Tbsp. Brown Sugar
  • 2 Tbsp. Coconut Oil
  • ½ Tsp. Cinnamon
  • ¼ Tsp. Cardamom
  • ⅛ Tsp. All Spice
  • ⅛ Tsp. Ground Ginger

Batter

  • ¾ Cup Ground Almonds or Almond Flour
  • 2 Tbsp. Brown Sugar
  • ½ Tsp. Vanilla
  • ½ Tsp. Baking Powder
  • Pinch of Salt
  • 1 Tbsp. Melted Coconut Oil
  • 1 Egg
  • 3 Tbsp. Full Fat Coconut Milk

 

Preheat oven to 400 degrees F.

Cut up apples and place in a hot eight inch cast iron skillet with the coconut oil, sugar, and spices on the stove top. Cook until the apples are tender. Remove from the heat.

Make the batter by mixing all the dry ingredients, then add the wet ingredients.

Add the blackberries to the skillet and pour the batter over the top of the fruit. Place the cast iron skillet in the oven and cook for 15 to 20 minutes, until the batter top is golden brown.

Benefits: The best part about this dessert is that it is fruit based and filling. You’ll get the natural sweetness of both apples and blackberries with a protein-packed batter to bring the flavors together. This recipe is a great dessert for a summer barbeque!

 

Maple Meringue Cookies

  • 4 Large Egg Whites
  • 1 Cup Maple Syrup
  • ¼ Tsp. Cream of Tartar
  • ¼ Tsp. Sea Salt
  • 1 Tsp. Cinnamon

 

Preheat oven to 200 degrees F and line baking sheets with parchment paper.

In a stand mixer, combine all the ingredients except the cinnamon. Beat on medium to high until the mixture forms stiff, fluffy peaks. 

This could take anywhere from five to ten minutes.

Once the meringue has formed, dollop scoops onto the parchment paper, leaving about an inch between each spoonful. Sprinkle some cinnamon on top.

Bake for an hour and a half to two hours, or until the meringues are dry. Turn off the oven and let them cool while the oven cools. Enjoy!
